They didn’t know it at the time, but the toaster oven’s inventors were really creating the world’s best bruschetta maker. Try this staple appetizer of Italian restaurants tonight.

Ingredients
Serves: 6- 6 roma (plum) tomatoes, chopped
- 1/2 cup sun-dried tomatoes, packed in oil
- 3 cloves minced garlic
- 1/4 cup fresh basil, stems removed
- 2 tablespoons balsamic vinegar
- 1/4 cup olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 French baguette, cut into 1/2-inch slices
- 2 cups shredded mozzarella cheese
Preparation method
Prep: 15 mins | Cook: 10 mins1. Toss the fresh tomatoes, sun-dried tomatoes, garlic and basil with the olive oil and vinegar in a bowl. Season with salt and pepper. Let the mixture’s flavors mingle for 10 minutes.
2. Heat toaster oven’s broiler to High.
3. Drizzle baguette slices with olive oil on both sides. Toast one side of the baguette slices under the broiler, then remove from heat and heap the tomato mixture over the untoasted side.
4. Sprinkle cheese on top of the tomato mixture, then broil for 5 minutes. Serve.Tip
To grill the appetizers, toast the olive-oil drizzled baguette slices on the grill, then add the tomato mixture and cheese and cook over slightly lower heat.
