Ingredients
Serves: 6- 6 (6 ounce) tilapia fillets
- 2 tablespoons flour
- Salt and pepper, to taste
- 2 tablespoons extra-virgin olive oil
- 1 onion, finely diced
- 2 teaspoons curry paste (or 1 ½ teaspoons curry powder)
- 1 (15 ounce) can unsweetened coconut milk
Preparation method
Prep: 10 mins | Cook: 12 mins1. Coat fish with flour and season with salt and pepper.
2. Pour oil into a large skillet and place over medium heat. Cook the fish in hot oil for 3 minutes, then flip and continue to cook for 3 more minutes, until fish is cooked thoroughly. Remove from pan and wrap with foil to keep warm.
3. Cook onions in the skillet for about 5 minutes, then add curry paste; cook for 1 minute, then add coconut milk, bring to a boil, and simmer on low for 4 minutes to thicken. Add fish to sauce and reheat, then serve.
