Three treasure egg details
INGREDIENTS:Serves 4
20g dried scallops
260g bean sprouts
1 small carrot
4 eggs
2 stalks coriander
Seasoning:
1 tsp concentrated chicken stock
¼ tsp pepper
½ tsp light soy sauce
Dash of sesame oil
4 tbsp cooking oil
Method:
- Soak scallops until soften. In a small bowl, combine scallops, chicken stock and enough water to cover the scallops. Steam for half an hour and shred.
- Remove roots of bean sprouts. Skin carrot and shred. Set aside. Arrange coriander leaves on plate.
- Beat eggs into a bowl. Add shredded scallops and all seasoning. Mix well.
- Heat oil in a pan and stir fry bean sprouts and shredded carrot for 1-2 minutes. Pour in egg mixture and fry till egg mixture is cooked. Dish out on to plate which has already been lined with coriander leaves. Serve hot with white rice.
