INGREDIENTS:

Serves 4

20g dried scallops

260g bean sprouts

1 small carrot

4 eggs

2 stalks coriander

Seasoning:

1 tsp concentrated chicken stock

¼ tsp pepper

½ tsp light soy sauce

Dash of sesame oil

4 tbsp cooking oil

Method:

  1. Soak scallops until soften. In a small bowl, combine scallops, chicken stock and enough water to cover the scallops. Steam for half an hour and shred.

  2. Remove roots of bean sprouts. Skin carrot and shred. Set aside. Arrange coriander leaves on plate.

  3. Beat eggs into a bowl. Add shredded scallops and all seasoning. Mix well.

  4. Heat oil in a pan and stir fry bean sprouts and shredded carrot for 1-2 minutes. Pour in egg mixture and fry till egg mixture is cooked. Dish out on to plate which has already been lined with coriander leaves. Serve hot with white rice.
