- Ingredients
- 2 cups white corn meal
- 2-1/2 cups boiling water
- 2 Tablespoons butter, melted
- 1-1/2 teaspoons salt
- 2 eggs, separated
- 1-1/2 cups buttermilk
- 1 teaspoon baking soda
Add corn meal gradually to boiling water and let stand until cool. Add butter, salt, egg yolks (slightly beaten), and buttermilk mixed with baking soda. Beat 2 minutes and add egg whites, which have been beaten until stiff. Turn into buttered bean pot or casserole and bake at 425 degrees for 40 minutes.
