- Ingredients
- 2 medium-sized white potatoes
- 1 package yeast cake
- 4 Tablespoons butter
- 2 Tablespoons salt
- 1 Tablespoon sugar
- 2 eggs
- 6 cups flour
- 1 Tablespoon sugar
These were often served at the James Madison dinners when he was President (1809 to 1817). Dolly, his wife, made everyone feel welcome. She was known to be a lovely lady.
Boil potatoes until tender. Save after straining, 1-1/4 cups potato water. Mash potatoes. Add butter, sugar and salt. When potato and potato water are lukewarm, add yeast in water and combine with potato mixture; beat well. Sift in flour, beating continuously. Knead until smooth and spongy. Return to greased bowl. Cover with damp cloth away from draft. Stand about 3 hours until doubled in bulk. Turn out on floured board. Roll 1 inch thick. Cut into rounds with biscuit cutter. Place on buttered sheet far apart. Let rise until light. Bake at 350 degrees until golden brown. Brush with butter and serve at once.
