The farmer's omelet recipe details
- Ingredients:
- 3 Tablespoons vegetable oil
- 1 cup chopped green onion
- 3-1/2 cups hash browns
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 eggs, beaten
- 1 red pepper chopped
- 1-1/4 cup milk
- 1 cup Swiss cheese, coarsely grated
Preheat oven to 400 degrees. Heat a skillet or frying pan, then add oil. Heat oil and add hash browns. Brown on one side, then sprinkle with salt, pepper and green onion. Spray a 9-inch pie plate with a non stick spray. Pat hash browns into bottom of pie plate. Put chopped pepper in frying pan and cook until slightly wilted. Meanwhile, beat eggs and milk. Top potatoes with red peppers, followed by Swiss cheese and pour egg mixture over all. Bake 40 to 45 minutes until set and golden.
