Ingredients
1 small | piece of ginger, grated |
150 g | mushrooms, sliced |
500 g | pumpkin pulp, diced |
1 stalk(s) | lemon grass, finely chopped |
400 g | chicken breast fillets, cut into bite-sized pieces |
1 can(s) | coconut milk |
3 | lime leaves |
3 | spring onions, chopped |
¼ bunch(es) | cilantro, chopped |
1 | lime, juice |
3 tbsp | fish sauce |
1 l | chicken stock |
Instructions
In a saucepan, bring the stock to a boil. Add coconut milk, lemon grass, mushrooms, ginger, pumpkin and the lime leaves and cook for 10 minutes. Add the chicken, spring onions and cilantro, reduce the heat and cook for some more minutes until the chicken is done.Season to taste with fish sauce and lemon juice and serve.
