Thai style noodle soup recipe details
Ingredients
2 tbsp | grapeseed oil |
2 | shallots or 1 small onion, finely chopped |
1 stalks | lemon grass, very finely chopped |
3 clove(s) | garlic, crushed |
1 | green chilli, deseeded and very finely chopped |
1 tbsp | Thai red curry paste |
1.2 l | chicken stock |
1 tbsp | fish sauce |
1 tsp | soft brown sugar |
2 tbsp | fresh coriander, chopped |
noodles for 6 (see pack instructions) |
Instructions
Heat oil in a large heavy-based saucepan, add shallots/onion, lemon grass, garlic and chilli and fry over a low heat for 5 minutes, stirring frequently.Stir in curry paste, then chicken stock and bring to the boil, then reduce heat to low, cover and simmer for 15 minutes.
Meanwhile soak the noodles in boiling water (according to the pack instructions) then drain and add to the soup with the fish sauce and sugar.
Simmer for 5 minutes, then add coriander, taste and add more fish sauce if necessary. Serve in bowls or mugs.
