Thai style beef and vegetable curry recipe details
Ingredients
200 g | carrots, sliced |
150 g | snow peas |
100 g | baby corn cobs |
75 g | cashew nuts |
400 g | beef sirloin steak, cut in strips |
1 tbsp | sesame oil |
400 ml | coconut milk |
2 tsp | red curry paste |
2 sprig(s) | Thai basil, chopped |
salt | |
lemon juice |
Instructions
Toast the nuts in a dry pan until golden, the chop the nuts roughly.In a wok, heat the oil. Add the meat and stir-fry until medium done. Remove from the pan and set aside. Add the carrots, snow peas and half of the nuts and stir-fry for 3-4 minutes. Add the curry paste u nd cook stirring until fragrant. Pour in the coconut milkand bring to a boil. Add the baby corn and simmer for a few minutes. Season to taste with salt and lemon juice. Return the beef and briefly heat through. Fold in the basil.
Serve sprinkled with the remaining nuts.
