Thai Style Beef and Vegetable Curry recipe

|200 g||carrots, sliced|
|150 g||snow peas|
|100 g||baby corn cobs|
|75 g||cashew nuts|
|400 g||beef sirloin steak, cut in strips|
|1 tbsp||sesame oil|
|400 ml||coconut milk|
|2 tsp||red curry paste|
|2 sprig(s)||Thai basil, chopped|
Toast the nuts in a dry pan until golden, the chop the nuts roughly.
In a wok, heat the oil. Add the meat and stir-fry until medium done. Remove from the pan and set aside. Add the carrots, snow peas and half of the nuts and stir-fry for 3-4 minutes. Add the curry paste u nd cook stirring until fragrant. Pour in the coconut milkand bring to a boil. Add the baby corn and simmer for a few minutes. Season to taste with salt and lemon juice. Return the beef and briefly heat through. Fold in the basil.
Serve sprinkled with the remaining nuts.
