Ingredients
2 | salmon trout fillets |
2 tbsp | butter |
1 bunch(es) | mixed herbs (chervil, cress, parsley, sorrel, chives, borage and burnet) |
300 g | sour cream |
1 | hard boiled egg, peeled and finely chopped |
1 | shallot, finely chopped |
½ tbsp | vinegar |
1 tbsp | rapeseed oil |
salt and pepper | |
1 pinch(es) | sugar |
1 tsp | mustard |
400 g | small new potatoes, scrubbed |
1 tbsp | butter |
Instructions
Chop the herbs finely. In a bowl, mix the herbs with the shallots, vinegar, oil, mustard, sugar, sour cream and egg until well combined. Season to taste with salt and pepper. Refrigerate for 30 minutes.Cook the potatoes until tender. Peel the potatoes or leave them in their jackets, just as you like. In a pan, toss the potatoes in butter until slightly golden. Season with salt and nutmeg.
In a pan, fry the fish fillets in butter over medium heat for just about 1 minute per side. Take the pan from the heat and allow to stand a bit. Season with salt and pepper.
Serve the salmon trout fillets with the buttery potatoes on plates. Pour the Frankfurt green sauce into a sauce boat and serve with the fish.
