This’ll be one of the best things that’s ever come off your grill: Tender steak flavored with lime and dipped in fresh peanut sauce.
Ready in: 2 hours 30 mins

Ingredients

Makes: 16 kabobs
  • 1/4 cup packed brown sugar
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1 teaspoon lemon juice
  • 1 (14 ounce) can coconut milk
  • 1 1/2 teaspoons crushed red pepper flakes
  • 2 pounds boneless beef sirloin steak, cut into 1/4-inch slices
  • 2 limes, cut in half and thinly sliced
  • 1/4 cup peanut butter
  • 1 tablespoon chopped salted peanuts

Preparation method

Prep: 20 mins | Cook: 10 mins | Extra time: 2 hours, marinating

1. Pour brown sugar into a large plastic resealable bag. Add lime juice, soy sauce, curry powder, lemon juice, 1/4 cup coconut milk, and 1 teaspoon red pepper flakes. Gently shake to combine, then add steak.
2. Seal the bag and refrigerate for about 1 hour to marinate. Then drain. Preheat grill to medium heat.
3. Place beef onto 16 metal skewers, with lime between each chunk. Set on the grill and close the lid. Cook for about 3 minutes, then flip and cook for another 3 to 4 minutes, until beef is cooked through.
4. While beef is cooking, stir peanut butter together with the rest of the coconut milk and the rest of the red pepper flakes in a saucepan. Set over medium heat to melt the peanut butter. Stir well.
5. Serve beef kabobs with peanut sauce.
