INGREDIENTS:

2 fish fillets (I used dory fish)

2 stalks lemongrass

6 kaffir lime leaves

1 piece (2.5cm) ginger, finely sliced

1 red chili, deseeded and finely sliced

3 tbsp chopped coriander

2 limes

3 tbsp cooking oil

2 tbsp fish sauce

2-3 tsp castor sugar

Method:

  1. Clean fish fillets. Pat dry with kitchen paper and place them on a heatproof dish.

  2. Finely slice lemongrass (near root part only). Remove center of lime leaves. Slice the leaves finely.

  3. Mix lemongrass, lime leaves, ginger, chili and coriander. Rub the mixture to both side of the fillets.

  4. Squeeze juice from the limes onto the fillets. Pour the oil over the fillets. Season with fish sauce and castor sugar.

  5. Bake in preheat oven at 200 degC until thoroughly cooked.

  6. Serve with white rice.
