Thai fish details
INGREDIENTS:2 fish fillets (I used dory fish)
2 stalks lemongrass
6 kaffir lime leaves
1 piece (2.5cm) ginger, finely sliced
1 red chili, deseeded and finely sliced
3 tbsp chopped coriander
2 limes
3 tbsp cooking oil
2 tbsp fish sauce
2-3 tsp castor sugar
Method:
- Clean fish fillets. Pat dry with kitchen paper and place them on a heatproof dish.
- Finely slice lemongrass (near root part only). Remove center of lime leaves. Slice the leaves finely.
- Mix lemongrass, lime leaves, ginger, chili and coriander. Rub the mixture to both side of the fillets.
- Squeeze juice from the limes onto the fillets. Pour the oil over the fillets. Season with fish sauce and castor sugar.
- Bake in preheat oven at 200 degC until thoroughly cooked.
- Serve with white rice.
