Thai asparagus with scallops recipe details
Ingredients
60 ml | vegetable oil |
200 g | Thai asparagus |
2 clove(s) | garlic |
2 | shallots |
10 | scallops |
2 tbsp | fish sauce |
1 tbsp | soya sauce |
150 ml | coconut milk |
1 tsp | black pepper |
some | chili powder, optional |
Instructions
Cut asparagus in about 5 cm long pieces. Peel garlic and chop finely. Peel shallots and cut into very thin rings.Heat half of the oil in a wok and fry asparagus for about 2 minutes. Remove and set aside.
In the remaining oil, fry garlic and shallots until light brown. Add scallops and fry for about 2-3 minutes. (Be careful, if garlic and shallots get too dark, add coconut milk.)
Put asparagus back into the wok. Add fish sauce, soy sauce, black pepper and coconut milk and cook for about 3 minutes.
Serve with rice.
