Tex mex corn bread recipe details
Ingredients
50 g | corn semolina |
150 g | cornmeal |
150 g | wheat flour |
1 packet(s) | baking powder |
100 g | butter, melted |
300 ml | milk |
2 | eggs |
150 g | Cheddar or Gouda cheese, grated |
½ | onion |
50 g | dried tomatoes, pickled |
1 | mild jalapeño pepper, pickled |
6 tbsp | sweet corn |
salt and pepper | |
oregano |
Instructions
Lightly grease a loaf pan (25cm) and preheat the oven to 180°C.Mix the corn semolina, the cornmeal, the flour and the baking powder, stir in the melted butter, the milk, the eggs and 100g of the cheese and knead until well combined.
Finely chop the onion, the dried tomatoes and the jalapeño pepper. Fold the vegetables together with the sweet corn into the dough. Season with salt, pepper and oregano.
Spoon the dough into the loaf pan and sprinkle with the remaining cheese. Bake in the preheated oven for approximately 50 minutes.
