A casserole variation on a Reuben sandwich, with corned beef, blue cheese dressing, and sauerkraut.

Ingredients
Serves: 4- 8 ounces wide egg noodles, cooked and drained
- 2 tablespoons butter
- 1 pound sauerkraut, drained
- 1 medium white onion, finely chopped
- 4 cups chopped corned beef
- 4 ounces can green chilies, drained and cut up
- 2 medium tomatoes, peeled and sliced
- 1/2 cup blue cheese dressing
- 1 (8 ounce) package shredded Swiss cheese
- 6 rye crackers, crumbled
Preparation method
Prep: 20 mins | Cook: 40 mins1. Preheat oven to 375 degrees F.
2. In a 9×13-inch casserole dish, layer buttered noodles, sauerkraut, chopped onions, corned beef, green chilies, tomatoes and Swiss cheese.
3. Drizzle blue cheese dressing and top with rye cracker crumbs.
4. Bake covered for 40 minutes until cheese bubbles.
