Ingredients

120 g freshly grated Cheddar cheese
75 g soft butter
1 tbsp port
4  spring onions, finely chopped
½ tsp caraway
½ tsp mustard powder, coarsley ground
½ tsp Worcestershire sauce
75 g walnuts, coarsley chopped
crackers
2 sprig(s) parsley
cayenne pepper, to taste

Instructions

Mix the cheese with the butter. Stir in port, onions, caraway, mustard and Worcestershire sauce. Mix until well combined. Season to taste with cayenne pepper.

Spoon the mixture into a serving dish. Cover with the walnuts and press the walnuts down lightly into the mixture. Chill for a t least 2 hours.

Serve with crisp crackers and garnished with parsley leaves.
