Potted shrimp recipe details
Ingredients
450 g | clarified butter |
500 g | shrimp, peeled and cooked |
¼ tsp | freshly ground nutmeg |
¼ tsp | cayenne pepper |
To serve: | |
4 slice(s) | soft white bread, hot, buttered |
2 | lemons, cut into slices |
¼ bunch(es) | chives, chopped |
Instructions
Pat dry the shrimp, then cut them into 5mm pieces. Fill 250ml of the butter into a small saucepan and add the shrimp, nutmeg and cayenne pepper. Heat until very hot and allow the butter to absorb the flavours.Evenly divide the shrimp butter into 4 small ramekins (60ml) and firmly press down with a spoon. Place the ramekins for at least 4 hours into the fridge to set.
Gently heat the remaining butter in a small saucepan, then pour the hot butter evenly into the ramekins. Cool again in the fridge for at least 4 hours to set.
Serve the potted shrimp with the hot bread slices and lemon slices, garnished with chives rolls.
