Ingredients
900 ml | coconut milk |
200 ml | chicken stock |
3 tbsp | harissa paste |
500 g | chicken breast, cut into bite-sized pieces |
250 g | cherry tomatoes, halved |
250 g | mangetout |
200 g | rice noodles |
1 bunch(es) | cilantro, chopped |
Instructions
Pour the stock and the coconut milk into a saucepan and bring to a boil. Stir in the Harissa paste and the meat. Reduce the heat and simmer for 15 minutes.Add the tomatoes, mangetout and the noodles, bring to the boil again and cook for 3-4 more minutes. Stir in the cilantro and serve immediately.
