Tangerine soup recipe details
Ingredients
1 kg | tangerines, peeled and segmented, four of them zested |
1 medium | orange, zest only |
1 large | lemon, zest only |
125 ml | Cointreau or other orange liqueur (4 tbsp limoncello will also work) |
caster sugar, to taste | |
8 medium | meringues or 16 small to serve |
Instructions
Place the fruit segments into a food processor – you will probably need to do this in batches – and strain the juice through a fine sieve into a large bowl. Repeat for remaining segments. Add the grated zest and mix thoroughly. Check and adjust sweetness with caster sugar. Add liqueur and stir together. Chill for about 30 minutes to one hour.Serve in soup bowls or similar with meringues.
