Ingredients
100 g | butter |
300 ml | water |
900 g | caster sugar |
1 large can(s) | sweetened condensed milk, about 200g size |
1 tsp | flavouring of choice, vanilla extract, peppermint essence, rum essence etc |
Instructions
Place butter and water in a heavy-based saucepan and slowly heat until the butter has melted. Add the sugar and bring to a boil, stirring all the time.Once boiling, add the condensed milk and simmer for 20 minutes, stirring frequently to avoid sticking.
Remove from heat and add a flavouring of choice and beat until the mixture becomes grainy.
Pour into a lightly greased Swiss roll tin and when partly cooled, mark out with a sharp knife to 1-inch, 25cm squares or 2×1-inch, 50x25mm rectangles.
When completely cold, cut out pieces and store in an airtight container. Alternatively wrap in waxed paper.
