szechuan noodles details
INGREDIENTS:300g Chinese egg noodles
3 tbsp oil
3 cloves garlic, chopped finely
1 tbsp sesame seeds
1 tbsp sliced red chillies
80g Chinese cabbage, chopped finely
1/2 red capsicum, sliced thinly
2 tbsp vegetarian oyster sauce
1 tbsp light soy sauce
1/2 carrot, cut into matchsticks and blanched
100g snow peas, blanched
Salt to taste
Method:
- Place noodles in boiled water and soak until just tender. Drain.
- Heat oil in a wok. Fry chopped garlic, sesame seeds and sliced red chilies until fragrant. Add chopped Chinese cabbage and sliced red capsicum until fry for 30 seconds.
- Add noodles, carrot, snow peas and all the seasoning. Stir fry for 1-2 minutes.
- Dish out and serve on individual plate.
Note:
The original recipe includes 2 tbsp vinegar. We omitted this and We don’t quite really fancy vinegar in noodles.
