A very fast, very simple, very healthy fish for the grill. Swordfish cubes get a quick marinade and then go onto the fire.

Ingredients
Serves: 4- Juice and zest of 1 lemon
- 1/4 cup olive oil
- 1 garlic clove, crushed
- 1/4 cup chopped fresh basil
- 1 pound baby zucchini, halved lengthwise and flesh side scored
- 1 pound swordfish steaks, skinned and cut in 3/4-inch cubes
- 2 lemons quartered into wedges
- 4 bamboo skewers, soaked in cold water (soaking prevents them from catching fire)
- Black pepper
Preparation method
Prep: 10 mins | Cook: 10 mins | Extra time: 10 mins, marinating1. In a small bowl, whisk lemon zest and juice with olive oil and garlic. Add basil leaves. Brush some onto zucchini, then pour the rest over the swordfish cubes in a mixing bowl. Let marinate for 10 minutes.
2. Preheat grill to medium.
3. On each skewer, thread swordfish and lemon wedges. Season with black pepper, then grill for 10 to 15 minutes, until fish is cooked thoroughly. Turn every 5 minutes or so. Grill zucchini alongside the fish skewers.
