- Ingredients:
- 3 Tablespoons butter
- 2 large onions, thinly sliced and separated into rings
- 1 Tablespoon flour
- 1 cup milk
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 2 teaspoons chopped parsley
- 1/4 teaspoon white pepper
- 6 hard-cooked eggs
- 2 cups shredded Swiss cheese
In large frying pan over medium heat, melt 2 Tablespoons butter. Add onions; cook slowly, stirring often until onion is limp and tender (about 30 minutes). Melt remaining 1 Tablespoon butter in small saucepan over medium heat. Stir in flour and cook until bubbly. Gradually stir in milk and cook, stirring constantly, until thick and smooth. Stir in mustard, salt, parsley and pepper. In individual ramekins, layer onions, eggs (sliced), cheese and white sauce. Refrigerate overnight. Bake at 375 degrees for 40 minutes until bubbly.
Serves: 6. Multiply as necessary
