Ingredients
Serves: 8- 2 cups peeled, chopped zucchini
- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 3 teaspoons vanilla extract
- 3 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 3 teaspoons cinnamon
- 1/2 cup chopped nuts
Preparation method
Prep: 15 mins | Cook: 1 hour1. Preheat oven to 325 degrees F and coat two loaf pans with nonstick cooking spray.
2. In large mixing bowl, combine zucchini, eggs, oil, sugar, and vanilla.
3. Stir in flour, salt, baking soda, and cinnamon; fold in the nuts. Pour batter into loaf pans.
4. Bake for 1 hour.
