Ingredients

0.38 l | vegetable stock |
125 g | mushrooms |

Instructions
Pour the millet in a sieve, rinse with hot water and drain. Bring the vegetable stock to a short boil, take the pot off the fire, add the millet, cover and let soak for 15 minutes.Wash the Swiss chard, remove the root, separate the stems from the leaves and remove the fibrous skin from the ribs. Cut the leaves in stripes 6-7 cm wide and 10 cm long. The remaining leaves, which are possibly left over, can be sautéed together with the mushrooms to go within the filling.
Thinly slice the mushrooms. Heat the butter in a pan, add the mushrooms and possibly left over Swiss chard leaves and sauté, stirring frequently. Take the pan from the fire. Mix in the soaked millet and the grated cheese and season to taste with salt and nutmeg.
Spread the prepared leaves on a tea towel and cut the thick ribs even. Heat ½ a litre of slightly salted water and blanch the leaves for a minute. Then chill the leaves in a bowl with cold water and ice cubes. After a short time, remove and drain the Swiss chard.
Preheat the oven to 170°C.
Evenly divide the millet mixture on the prepared chard stripes. Fold the edges of the leaves sideways over the filling, then tightly roll up.
Slightly grease a casserole dish and arrange the Swiss chard rolls in there. Add 3 tablespoons of water. Spread the crème fraîche on top of each roll, then bake the rolls in the preheated oven for approximately 20 minutes.
Serve with crispy bread or mashed potatoes.
