|2 large||sweetheart cabbage leaves|
|150 g||celeriac, finely chopped|
|3 tbsp||single cream|
|125 g||minced turkey meat|
|1 tbsp||parsley, chopped|
|salt and freshly ground black pepper|
InstructionsBlanche the sweetheart cabbage leaves in salted water for a minute, then pat dry. Mix together the minced meat, egg, parsley and a third of the onions. Season with salt and pepper. Top the cabbage leaves with the mixture. Roll up and tie with kitchen string.
In a pan, heat the oil. Fry the rolls and another third of the onions until the rolls are golden all around. Stir in 6 tablespoons of the stock and add a pinch of each, mustard and caraway seeds. Cover and cook over low heat for 10 minutes.
In a pan, melt the butter. Sauté the celeriac with the remaining third of the onions until nearly soft. Stir in 2 tablespoons of the stock and the cream and bring to a boil. Reduce the heat, cover and cook for a few minutes until soft, but still a bit firm to the bite. Season to taste with salt and pepper.
Serve together with the cabbage rolls.
