Ingredients
Serves: 4- 1 tablespoon vegetable oil
- 4 thick-cut boneless pork shoulder chops
- Salt and pepper
- 1/2 ripe pineapple, cut into chunks
- 2 red, orange, or green bell peppers, cut into bite-sized chunks
- 1 jalapeno pepper, seeded and finely chopped
- 1 cup chicken stock
- 1/2 cup teriyaki sauce
Preparation method
Prep: 20 mins | Cook: 20 mins1. Pour 1 tablespoon vegetable oil into a skillet and heat over medium. Place pork chops in hot oil, sprinkle with salt and pepper, and cook for about 8 minutes (flipping once). Remove meat from pan and set aside.
2. Next, pour the remaining oil into the skillet. Toss in the pineapple, peppers, and jalapeno and saute for about 4 minutes. Remove from skillet and set aside with pork.
3. Pour remaining 1 cup of chicken stock into the skillet. Combine with teriyaki sauce. Cook over medium-high heat until the liquid has reduced by half. This will take about 5 minutes. Then add pork and vegetables and cook for another 5 minutes on low heat.
