|150 g||brown sugar|
InstructionsPreheat the oven to 170°C.
Prick the sweet potatoes with a fork and put them in a roasting pan. Roast for 30 minutes. Add the bananas into the pan and continue roasting for 10-15 minutes. Potatoes and bananas should be very soft when removing the pan from the oven. Do not turn the oven off.
Scoop out flesh from the potatoes and put into a large mixing bowl. Peel the bananas and add them to the bowl. Add 100g butter and honey. Beat with a wooden spoon until well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.
In a separate mixing bowl, rub together the remaining butter, sugar and flour until the mixture is the consistency of coarse crumbs.
Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Bake for about 20 minutes.
