Ingredients

6 large	potatoes, peeled
80 g	white sugar
240 ml	orange juice
100 g	brown sugar
100 g	butter, melted
240 ml	milk, hot
1 tsp	ground nutmeg
1 tsp	vanilla extract
3	oranges

Instructions

Cook sweet potatoes in lightly salted boiling water until tender, about 35 minutes. Drain and cool.

Mash potatoes using a potato masher or fork.

In a large bowl, combine mashed sweet potatoes, sugar, brown sugar, butter, milk, nutmegand vanilla. Beat until smooth.

Cut oranges in half and gently hollow out the pulp.

To serve, fill hollowed orange halves with the sweet potato mixture.
