Easy oven-baked sweet potato fries flavored with curry powder. Eat with ketchup or with a simple chive mayonnaise.

Ingredients
Serves: 4- 2 sweet potatoes, cut into 12 wedges each
- 2 tablespoons olive oil
- 1 tablespoon curry powder
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper, plus more to taste
- 1/2 cup mayonnaise
- 2 tablespoons minced chives
Preparation method
Prep: 10 mins | Cook: 20 mins1. Preheat oven to 400 degrees F.
2. Toss potato wedges with olive oil, then season with curry powder, salt, and 1/2 teaspoon black pepper. Pour onto two rimmed baking sheets.
3. Roast the wedges for about 20 minutes, until softened and beginning to crisp. 10 minutes through, flip the wedges over.
4. Whisk chives into the mayonnaise and add black pepper to taste. Serve as a dipping sauce for the wedges.
