Ingredients

1 large sweet potato, peeled and diced
2 medium white potatoes, peelded and diced
2 large turnips, peeled and diced
1 medium red onion, chopped
1 medium leek, diced
1 tbsp fresh rosemary, chopped
2 liter(s) vegetable stock
2 tbsp water
some fresh parsley, finely chopped
salt and freshly ground black pepper, to taste

Instructions

In a large saucepan, cook leek, onion and water until tender. Stir in turnips, potatoes and some vegetable stock. Cook for 4-6 minutes and stir well. Pour in the rest of the vegetable stock. Add chopped rosemary. At low heat, cook for 15 minutes, until the potatoes are soft.

Take out half of the mixture and puree it in a blender. Return the pureed mixture to the saucepan and reheat the soup gently.

Season with salt and black pepper. Garnish with some finely chopped parsley and serve warm.
