Ingredients
6 | tomatoes, peeled and chopped |
2 | sweet chilli peppers, chopped |
4 | eggs |
salt and pepper | |
2 clove(s) | garlic, chopped |
3 tbsp | olive oil |
1 tsp | paprika powder |
½ tsp | cumin |
sugar |
Instructions
In a large pan heat the oil. Sauté garlic and chillies until golden. Add the tomatoes. Season with salt, pepper, sugar, paprika and cumin and bring to a boil. Cover and cook over very low heat for 30 minutes.Check seasoning and adjust if necessary. Gently beat the eggs into the sauce. Cook for 4 minutes or until the eggs are done to your liking.
Serve with white bread to mop up the sauce.
