Sweet Potato and Chilli Soup recipe

Ingredients
500 g | sweet potatoes, peeled and roughly chopped |
500 g | carrots, peeled and roughly chopped |
2 clove(s) | garlic, peeled and chopped |
600 ml | vegetable stock |
some | low fat cooking spray or oil |
2 large | onions |
1 | red chillies, de-seeded and roughly chopped |
Instructions
Spray a large saucepan with cooking spray or oil and add onions and garlic. Cook until soft.Add chillies and cook for a further 2 minutes.
Add the carrots and potatoes and pour the stock over the top. Bring to the boil and simmer for 20 minutes or until all ingredients are tender.
Liquidise the soup in a blender to give a smooth texture and season to taste.
Serve with slice of bread with lots of butter.
