sweet pepper frittata recipe details
Ingredients
6 large | eggs |
25 g | butter |
1 medium | red pepper |
1 medium | yellow or orange pepper |
225 g | chestnut mushrooms, cleaned and sliced |
1 ½ tbsp | mascarpone cheese |
50 g | Parmesan cheese, freshly grated |
1 bunch(es) | small, coriander, chopped |
salt and fresh ground pepper, to taste |
Instructions
Remove the top and bottoms of the peppers, remove the cores and seeds and slice through from top to bottom. Open out and flatten the peppers with the inside down and finely slice along the shorter side.Whisk the eggs in a bowl and season to taste.
Melt the butter on a medium heat in a large frying pan and add the peppers and mushrooms and sauté for about 5 minutes or until just tender. Drain the vegetables with a slotted spoon and set aside. Reheat the pan and pour in the eggs and swirl them around for a few seconds. Stir in the mascarpone and about half the cheese.
When the eggs are beginning to set at the bottom of the pan, sprinkle over with the peppers and mushrooms and add the coriander. Continue to cook for 7-8 minutes until just set and run a spatula around the edge to loosen it. Add the remaining cheese and cook for another minute before turning out.
Cut into wedges to serve, cheesy side up, with a salad.
