This sweet and spicy chile sauce makes an enormous quantity. Consider canning it for later use. Serve with chicken, eggs, fish… anything you want something spicy on.

Ingredients
Makes: 6 cups- 3 1/2 ounces bird’s eye chiles, halved
- 3 1/2 ounces long red chiles, halved
- 2 cups white vinegar
- 2 cups sugar
- 2 teaspoons salt
- 4 cups chopped tomatoes (canned if desired)
- 2 cups tomato sauce
- 2 cloves garlic, chopped
Preparation method
Prep: 10 mins | Cook: 20 mins1. Remove the stalk from the chiles. Remove the seeds from half of the chiles for a milder sauce, or keep them whole.
2. Place the chiles, vinegar, sugar, salt, tomatoes, and sauce in saucepan and simmer for 15 minutes. Add garlic and simmer for an additional 5 minutes.
3. Transfer to blender. Pulse until blended well.
4. Pour into sterilized bottles to store.
