Ingredients
350 g | wheat flour |
150 g | wholemeal wheat flour |
30 g | fresh yeast |
60 g | sugar |
1 tsp | vanilla sugar |
60 g | soft butter |
2 medium | egg |
250 ml | milk, lukewarm |
1 dash(es) | salt |
Instructions
Dissolve yeast in 50 ml milk, add sugar. Mix both flour in a bowl. Pour yeast in the middle of the flour and mix a bit – not with all of the flour! Let stand for 15 minutes.Add butter, 1 egg, rest of the milk and salt. Kneat until you have a smooth dough. Cover and let stand in a warm place until the dough has doubeld. Form a roll, cut in 3 equal pieces.
Roll each piece until a bit thinner and longer. Make sure the pieces are still equal.
Now you have to braid the dough: Lay the 3 dough rolls parallel, press the ends of the 3 rolls at one side together, lay the right roll across the middle, the left across the right and so on. Press ends together.
An easier way is to twist the dough: Make two equal long and thin pieces instead of three, lay parallel, press ends at one side together and twist strands around each other. Press ends of the second side together.
Place braid on a baking tray. Separate the second egg, whisk yolk and brush the braid with the yolk.
Let stand for another 10 minutes. Bake at 200°C for 25 minutes.
