sweet banana omelette recipe details
Ingredients
1 tbsp | unsalted butter, to fry |
3 large | eggs, free range preferred |
¼ tsp | salt |
2 tsp | caster sugar |
2 tbsp | double cream |
2 medium | bananas, peeled and sliced on a long diagonal |
2 sprig(s) | fresh mint |
1 small | tangerine, peeled and segmented for decoration |
icing sugar, to dust liberally | |
2 tbsp | whipped cream to serve |
Instructions
In a jug or bowl, add the eggs, salt, sugar and cream and whisk together until slightly foamy.Heat a medium frying pan on low-medium heat and melt the butter. Pour the mixture into the pan and cook for about 30 seconds lightly whisking the mixture as it starts to set. Cook further until the eggs are fully set. Arrange about half the banana slices across half the setting omelette and fold the other half of the omelette over the bananas.
Remove the pan from the heat and sprinkle icing sugar over the top of the omelette. Arrange the remaining banana slices over the omelette. Place tangerine segments around pan and sprinkle icing sugar over the top. Caramelise under a hot grill or by using a gas torch.
Divide across centre and serve immediately.
Decorate with mint sprig.
