Ingredients
1 kg | carrots, cleaned and sliced |
1 | green pepper, seaded and cut into strips |
2 medium | onion, sliced |
250 ml | tomato puree |
200 ml | white vinegar |
3 tbsp | cooking oil |
2 tsp | Worcestershire sauce |
250 ml | sugar |
1 tsp | prepared mustard |
1 tbsp | salt |
some | black peppercorns, grounded to taste |
Instructions
Boil the carrots until they are cooked but still firm, then drain.Arrange the carrots, green pepper strips and onion slices in layers in a bowl with a lid, ending with a layer of carrots.
Mix together the remaining ingredients in a saucepan, bring to the boil and simmer for 3 minutes, stirring constantly.
Pour the sauce over the carrots, allow to cool, cover with lid and marinate in fridge for 2 days.
