Ingredients
For the dough: | |
4 tsp | active dried yeast |
350 ml | warm water 40-45ºC/100-110ºF |
575 g | plain flour, you may not need to use all |
100 g | sugar |
1 tsp | salt |
60 g | butter or margarine |
2 medium | eggs |
For the filling: | |
125 g | almond paste, crumbled |
100 g | brown sugar |
60 g | butter or margarine, softened |
½ tsp | almond extract |
For the topping: | |
3 tbsp | sugar |
1 tbsp | plain flour |
1 tbsp | butter or margarine |
For the Icing: | |
200 g | icing sugar |
1 tsp | vanilla extract |
2 tbsp | milk, probably a little bit more |
Instructions
To prepare the Dough:Mix the yeast and water in a bowl. Allow to stand for a few minutes until a few bubbles appear. Add about a third of the flour, the sugar, salt, butter and eggs. Beat together for about 2-3 minutes until smooth. Add about ¾ of the remaining flour and mix together until smooth and then sufficient of the remaining flour to form a soft dough that is not excessively sticky.
Turn out to a lightly floured surface and knead for 7-8 minutes until smooth and elastic. Return to a greased bowl and turn the dough over a couple of times to cover the entire surface with oil. Cover with cling film and leave to rise in a warm place for about an hour until doubled in size.
To mix the filling:
During the latter stages of rising time, roughly mix the ingredients in a small bowl. Set aside.
To mix the topping:
Mix the ingredients together in a small bowl until well mixed. Set aside.
Preheat the oven to Gas Mark 4, 180ºC, 350ºF.
To form the rolls:
Knock back the dough and roll out to a rectangle about 15×10 inches, 38×25 cm approximately. Spread the filling as evenly as possible over the dough surface. Roll up as tightly as possible from one of the longer sides and cut into four equal lengths. Cut each of these lengths equally into 3 slices and place them cut side down onto a lightly greased baking sheet. Cover with a damp tea towel and allow to rise in a warm place for about 30 minutes. Sprinkle the topping over the rising buns.
Bake for about 35 minutes until well risen and golden brown on top. Allow to cool on tray for 15-20 minutes.
To make the icing:
Mix the drizzle ingredients together in a small bowl, adding sufficient milk to form a soft dropping consistency. Drizzle evenly over the buns whilst still quite hot. Allow to cool completely before serving.
Note:
These buns can be safely frozen if necessary, preferably in small numbers within a sealed or self-sealing plastic bag.
