Ingredients
325 g | plain flour |
3 tbsp | suet or vegetable suet |
2 tbsp | raisins or sultanas |
1 pinch(es) | salt |
water or milk to mix | |
For the Filling: | |
125 g | unsalted butter |
300 g | brown sugar |
Instructions
Mix the flour, salt, suet and fruit in a bowl. Add enough liquid to make a firm dough.Turn out the dough onto a lightly floured surface. Use about two thirds and roll out to a rectangle large enough to line a 1½ pint or 900ml pudding basin. Grease the basin and position the pastry to fit to the rim.
Fill the centre with the butter and brown sugar.
Roll out the remaining pastry to fit as a lid, tucking under any corners of pastry.
Cover the top with greaseproof paper and steam for about 2 hours.
Serve hot with cream.
About the recipe:
Probably related to Sussex Pond Pudding as it is similarly constructed, but the filling is a simple caramel sauce.
