Ingredients
9 | egg(s), (2 eggs per person and 1 for the breading) |
300 g | clarified butter |
2 tbsp | flour |
5 tbsp | breadcrumbs |
200 g | leaf salad |
2 tbsp | olive oil |
2 tbsp | raspberry vinegar |
1 tsp | Dijon mustard |
1 tsp | honey |
1 tbsp | herbes de Provence, dried |
Instructions
Boil 8 eggs for 2.5 to 3 minutes, chill the eggs and carefully peel them; dry them with a paper tissue.Then beat the last one on a plate, first roll the boiled eggs in flour, then in the beaten egg and at last in the breadcrumbs (repeat procedure).
Heat butter oil in a sauce-pan and deep-fry the eggs, crisping them from all sides. Remove them from pan and place on a tissue to degrease.
Mix olive oil, raspberry vinegar, mustard, honey, herbs, salt and pepper for a fine vinaigrette and mix with the salad leaves, arrange salad on 4 plates, place 2 eggs on each plate.
Serve with roasted bread and a glass of dry white wine.
