Ingredients

9  egg(s), (2 eggs per person and 1 for the breading)
300 g clarified butter
2 tbsp flour
5 tbsp breadcrumbs
200 g leaf salad
2 tbsp olive oil
2 tbsp raspberry vinegar
1 tsp Dijon mustard
1 tsp honey
1 tbsp herbes de Provence, dried

Instructions

Boil 8 eggs for 2.5 to 3 minutes, chill the eggs and carefully peel them; dry them with a paper tissue.

Then beat the last one on a plate, first roll the boiled eggs in flour, then in the beaten egg and at last in the breadcrumbs (repeat procedure).

Heat butter oil in a sauce-pan and deep-fry the eggs, crisping them from all sides. Remove them from pan and place on a tissue to degrease.

Mix olive oil, raspberry vinegar, mustard, honey, herbs, salt and pepper for a fine vinaigrette and mix with the salad leaves, arrange salad on 4 plates, place 2 eggs on each plate.

Serve with roasted bread and a glass of dry white wine.
