Ingredients
8 tbsp | unsalted butter |
1 tbsp | sugar |
300 ml | milk |
3 medium | eggs |
2 tbsp | ground almonds |
1 large | lemon, zest only |
2 tbsp | fresh white bread crumbs |

Instructions
An early form of custard tart, with a strong lemony taste.Grease a 2, 12-hole tartlet or 2, 6 hole Yorkshire pudding tins.
Roll out the pastry and cut out rounds to fit the tin(s) used.
Preheat oven to Gas Mark 7, 220°C, 425°F.
Boil the milk with the bread crumbs and allow to cool for several minutes. Add the butter, sugar, almonds and zest and stir until the butter melts. Beat the eggs and add one at a time to the mixture
Fill the pastry with the mixture and bake for 10-15 minutes or until the pastry is golden brown and the filling set.
Serve warm or cold.
