Ingredients
For the ‘sponge’: | |
100 g | white bread flour |
1 tsp | runny honey |
½ tsp | easy bake yeast |
75 ml | warm water 40-45°C/100-110°F |
For the main mixture: | |
250 ml | warm water 40-45°C/100-110°F |
1 | egg, yolk only |
25 g | unsalted butter, softened |
1 tsp | runny honey |
400 g | white bread flour |
2 tsp | salt |
1 ¼ tsp | easy bake yeast |
Instructions
Mix the sponge ingredients together in a small bowl until they form a smooth dough. Cover with a lightly dampened tea towel and leave in a slightly warm place for up to 2 hours, until it shows signs of fermenting. Remove the tea towel, cover with cling film and refrigerate overnight.Remove the sponge mixture from refrigerator about 30 minutes in advance of wishing to continue to allow the mixture to warm to room temperature.
Place the remaining ingredients into the bowl of your bread machine in the order specified by the manufacturers, adding the sponge mixture as part of the ‘wet’ ingredients. Set the machine either to ‘Basic’ or ‘White Bread’ program, select 2lb or 1.75kg loaf size and wanted crust colour and start machine.
About this recipe:
I have made this loaf by hand as well as in a machine. However, I have managed to lose the baking time which was written on a separate piece of paper, although I believe it to have been about 20-25 minutes at Gas Mark 5, 190°C, 375°F or Gas Mark 6, 200°C, 400°F but it was last baked without a machine about 3 or 4 years ago.
