Ingredients
Serves: 4- 1 tablespoon olive oil
- 4 (8 ounce, 1-inch thick) pork chops
- 1 (20 ounce) can pineapple chunks
- 3 tablespoons brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 large sweet potaotes, peeled and cut into 1-inch cubes
- 1 green bell pepper, cut into chunks
- 1 tablespoon cornstarch
Preparation method
Prep: 15 mins | Cook: 35 mins1. Pour oil into a large skillet and set over medium heat. Add pork chops and cook until the pork chops are well-browned on both sides.
2. Pour pineapple juice into a bowl. Measure 1/2 cup of the juice into another bowl and whisk together with brown sugar, salt, and cinnamon. Toss with sweet potatoes, then pour into the skillet.
3. When mixture comes to a boil, turn heat down to low and place a lid on the skillet. Cook for 15 minutes, then stir in green bell pepper and pineapple chunks. Replace lid and cook for another 15 minutes.
4. Whisk cornstarch into the rest of the pineapple juice. Then stir into the skillet; cook for another 2 to 3 minutes to thicken. Serve with rice or pasta.
