This is a recipe handed down from generation to generation. Timing of dehydrating depends on thickness of meat.

Ingredients
Makes: 2 1/2 pounds- 1/4 cup water
- 1/4 cup ketchup
- 1/4 cup Worcestershire sauce
- 1/4 cup olive oil
- 3 tablespoons honey (or brown sugar)
- 1 tablespoon liquid smoke
- 1 tablespoon dried onion flakes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried oregano leaves
- 1 teaspoon garlic powder
- 5 pounds venison or beef, cut into 1/8-inch-thick strips
Preparation method
Prep: 20 mins | Cook: 6 hours | Extra time: 8 hours, marinating1. Combine all of the marinade ingredients into a zip-top plastic bag until evenly blended. Mix in the venison strips until evenly coated. Press out the air and seal the bag. Marinate in the refrigerator 8 hours to overnight.
2. Remove venison from the marinade and squeeze off any excess marinade. Arrange strips into a food dehydrator.
3. Dry on 160 degrees F until dried, about 6 hours. Or dry according to manufacturer’s directions.
