This is a recipe handed down from generation to generation. Timing of dehydrating depends on thickness of meat.
Ready in: 14 hours 20 mins

Ingredients

Makes: 2 1/2 pounds
  • 1/4 cup water
  • 1/4 cup ketchup
  • 1/4 cup Worcestershire sauce
  • 1/4 cup olive oil
  • 3 tablespoons honey (or brown sugar)
  • 1 tablespoon liquid smoke
  • 1 tablespoon dried onion flakes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon garlic powder
  • 5 pounds venison or beef, cut into 1/8-inch-thick strips

Preparation method

Prep: 20 mins | Cook: 6 hours | Extra time: 8 hours, marinating

1. Combine all of the marinade ingredients into a zip-top plastic bag until evenly blended. Mix in the venison strips until evenly coated. Press out the air and seal the bag. Marinate in the refrigerator 8 hours to overnight.
2. Remove venison from the marinade and squeeze off any excess marinade. Arrange strips into a food dehydrator.
3. Dry on 160 degrees F until dried, about 6 hours. Or dry according to manufacturer’s directions.
