This a great summertime salad that I discovered while trying to be fat-free for my Doctor. Yeah right.. Anyways I had to make a side salad for a barbecue and this is what I made.. Tastes great even in the fat-free version.

Ingredients
Serves: 4- 1 1/2 cups bow-tie pasta
- 1 large tomato, diced
- 1 /2 cup peas, cooked and cooled
- ½ cup corn kernels, cooked and cooled
- 1 ½ cups mayonnaise (fat-free is what I used)
- 2 tablespoons chopped fresh cilantro
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 ½ teaspoon black pepper
- ½ cup Parmesan cheese (Or low-fat Parmesan cheese)
- 30 medium shrimp, fully cooked
Preparation method
Prep: 10 mins | Cook: 10 mins | Extra time: 30 mins, chilling1. Bring large pot of water to boil and cook pasta until al dente, about 8 minutes. Drain.
2. Mix pasta, tomatoes, peas, and corn in large bowl. Fold in mayo until thoroughly mixed.
3. Sprinkle in spices, herbs, and cheese until mixed evenly. Add shrimp and chill until cold, at least 30 minutes.
