Summer Vegetable Stew with Minced Meat recipe

|300 g||minced beef|
|1 medium||aubergine, trimmed and diced|
|1 medium||courgette, trimmed and diced|
|salt and pepper|
|1 pinch(es)||ginger powder|
|1 pinch(es)||caraway powder|
|1 pinch(es)||dried marjoram|
|1 large||onion, finely chopped|
|1 clove(s)||garlic, finely chopped|
Combine the meat with garlic and season with caraway, marjoram, salt and pepper. Heat oil in a large saucepan and stir-fry the meat, together with the onion, until crumbly and browned. Add aubergine and courgette and fry over low-medium heat until the stew is soft and well combined. Season to taste with cayenne pepper, ginger, coriander and soy sauce.
Serve with rice.
