Ingredients
300 g | minced beef |
1 medium | aubergine, trimmed and diced |
1 medium | courgette, trimmed and diced |
salt and pepper | |
1 pinch(es) | ginger powder |
soy sauce | |
ground coriander | |
1 pinch(es) | caraway powder |
1 pinch(es) | dried marjoram |
1 large | onion, finely chopped |
1 clove(s) | garlic, finely chopped |

Instructions
Combine the meat with garlic and season with caraway, marjoram, salt and pepper. Heat oil in a large saucepan and stir-fry the meat, together with the onion, until crumbly and browned. Add aubergine and courgette and fry over low-medium heat until the stew is soft and well combined. Season to taste with cayenne pepper, ginger, coriander and soy sauce.Serve with rice.
