Minced meat and potato tortilla recipe details
Ingredients
600 g | potatoes, peeled and diced |
100 g | mushrooms, sliced |
8 | eggs |
½ bunch(es) | sage, chopped |
1 | onion, chopped |
300 g | beef mince |
50 g | olives, pitted and sliced |
salt and freshly ground black pepper | |
3 tbsp | olive oil |
1 tbsp | tomato puree |
Instructions
Cook the potatoes in salted water for 15 minutes, then drain and allow to cool.Beat the eggs into a bowl. Stir in the sage and season with salt and pepper.
In a wide and shallow pan heat 2 tablespoons of oil and fry the potatoes for 5 minutes. Add the onions and cook for 3-4 more minutes. Season with salt and pepper. Take all out of the pan and set aside.
Add 1 tablespoon of oil into the pan and fry the minced meat and the mushrooms until the meat is browned and crumbly. Stir in the tomato purée and the olives and cook stirring for another minute. Return the potatoes and onions and flatten. Pour over the eggs, cover and cook over low heat until set.
Cut the tortilla into pie slices and serve with green salad.
