Ingredients
2 medium | onions, chopped |
3 tbsp | butter |
3 medium | eggs, hard-boiled, peeled, crumbled |
4 | summer squash, diced |
2 medium | eggs, beaten |
90 ml | double cream |
Instructions
Preheat oven to 170°.Melt butter in a saucepan and sauté onion until soft.
In a large bowl, combine onions and butter with summer squash and chopped eggs. Pour mixture into a greased casserole dish.
Beat the remaining to eggs and combine with the cream. Pour over squash in casserole and bake for 30 minutes.
