Ingredients
1 medium | egg, white only |
500 g | icing sugar |
food colouring | |
24 | dried currants, for the eyes |
string, for the tails |
Instructions
In a bowl beat the egg white until frothy. Sieve the icing and add to the egg white to produce a stiff mixture. Add a few drops of any preferred food colouring.Knead the mixture in to a firm paste and divide into 12 pieces.
Roll into oval shapes. Make one end pointed to form a nose and pinch up two small pieces to produce ears.
Place two dried currants as eyes and make a tail using string.
Place the mice onto parchment paper in a warm place and leave them to dry for 24 hours.
Store in an airtight container.
