Ingredients

1 medium egg, white only
500 g icing sugar
food colouring
24  dried currants, for the eyes
string, for the tails

Instructions

In a bowl beat the egg white until frothy. Sieve the icing and add to the egg white to produce a stiff mixture. Add a few drops of any preferred food colouring.

Knead the mixture in to a firm paste and divide into 12 pieces.

Roll into oval shapes. Make one end pointed to form a nose and pinch up two small pieces to produce ears.

Place two dried currants as eyes and make a tail using string.

Place the mice onto parchment paper in a warm place and leave them to dry for 24 hours.

Store in an airtight container.
